Spicy Rosemary Nuts

Updated: Feb 21, 2020

This weekend I hosted a party for over 100 women. I went to town on the Cheese Boards!

Cheese boards are so fun and sooooo easy- plus they give a Wow factor which I love. Pick a few cheeses, cut them in fun shapes then let the creativity flow! Have fun, pour a glass of wine or sparkling water ( because bubbles make life more fun!), put on a great playlist and enjoy creating something that people will love to look at and indulge.

One of my goals when I create my cheese boards is to keep healthy options available. This year I garnished my boards with fresh figues, golden berries ( so pretty and vibrant!), fresh pommegranite, blackberries and raspberries.

I also made some Spicy Rosemary Nuts which were a huge hit! So savoury, a little sweet with a little kick - they keep you coming back for more! They were so delicious when pairing with the wines we served and both soft and hard ( aged) cheeses. I wanted to share the recipe as many of you have been asking AND they are so ridiculously SIMPLE!!!

Prep time :5 mins

Cook Time : 20 mins

Preheat oven to 350 F

Ingredients:

4 cups raw pecans, walnuts and or cashews ( you pick- or do a mix of all three!)

1/4 cup Maple Syrup

3 sprigs fresh rosemary (take off the branch)

1 tsp Chili powder

1 tsp cayenne pepper

1 tsp Sea Salt

2 Tbsp Olive Oil

Combine all the ingredients in a bowl and mix so nuts are completely covered. Line Cookie sheet with parchment paper ( no mess to clean up that way) and spread nuts evenly on the cookie sheet. Bake at 350 F for 20 minutes. Let cool. And Voilà!!! You've got a delicious, healthy option for your cheese boards, charcuterie or fun snack when you are entertaining and having guests over.

Keep it simple. Keep it tasty and have fun while you are creating foods for your guests!
